My team and I had the privilege to compete in this great event, Ribs on the Ridge in Haines City, FL. This is the second year for Hogs Gone Wild BBQ to compete here, last year we got RGC out of 43 teams, in the backyard division. The only thing better then the beautiful venue, is the incredible staff that organized this event, thank you all!!!! Of course, the FBA reps. have done their usual terrific job, thank you all!!!

Of course we have to start off with the GRAND CHAMPIONS, and for this event it was:

HGWBBQ had a good cook, we finished 12th overall, out of 44 Pro teams. We got 11th in chicken, 33rd in ribs (Nightmare table), 8th in pork, & 3rd in Brisket!!! Not a bad day.

This years Sam’s Club has already kicked off, first stop was in Tampa, FL. There were only 20 teams competing in this competition, but they were many of the top teams from the Tampa region there.

If you are not familiar with how the Sam’s club events work, it is an elimination competition, in this case, 20 teams signed up to compete, here in Tampa, FL, but only the top 6 overall, will get to move on to compete in the regional in Madison, TN on Sept. 22, 2012. There are 5 regions across the country, each region has 5 qualifier cook offs within that region, (like the one here in Tampa).  The top ten teams from the regional cook off with go head-to-head at the Sam’s Club National BBQ Championship. This year’s championship is being held in, Bentonville, AR. on Oct. 13, 2012.

The Grand Champion for the Tampa cook off was: Good Buddies BBQ. Joel Vann and his team, are out of Lakeland, FL, Congratulations Good Buddies BBQ!!!!

A strong fourth place finish goes to HGW friend, Big Papa’s Country Kitchen, Dana Hillis. Dana, qualified for the Sam’s Club, National, last year, and it looks like he is off to a good start this year as well. Just a side note, Dana and team, has been tearing up the FBA in 2012, competing in only 4 FBA events so far this year and have earned 2 GC and 2 RGC. Great job Dana!!!

Fifth place goes to another, strong FBA and KCBS competitor, Jimmy Brod of Everglades Seasoning BBQ. Jimmy is always in the mix at a BBQ competition, and stands behind the great products he uses from, Everglades Seasoning check those guys out, for sure!!!

Rounding out the top six qualifiers is Ford Alison, from Great Lakes BBQ & Feed Co. Ford has been around this game for sometime now, and he always has hand in the out come of an event. Super nice guy, and I am very happy to see Ford qualify for the next round.

I have know JM, Jonathan Martinez, Producer/Host, of  Celebrity Grill for about one year now. JM is one person who has, always impressed me with his knowledge around the grill, and his desire to continue to expand his knowledge of the grilling world.

Rib Practice

Doing a follow up on Practice cooks, are they necessary?

Yes, doing more practice today, ribs were on the schedule, and believe me, it was time for a ribs practice.  We took a beating at our last competition on our ribs, finishing 60th out of 73 teams. Normally ribs are our go to category, we made some changes and got away from what has worked for us, in the past. Sometimes that can be a big mistake. So it was time to get back to the test kitchen, and really see what was going on with our ribs.

This was our turn-in at our last competition, really lacking color.

I was really not pleased with our ribs the last few times out, so we knew we had to test things out. So we gathered a few tasters, which funny enough, after doing BBQ for a couple of years, willing tasters are hard to come by. It use to be easy to find some folks, usually those who live with you, to try out your BBQ, but now, every time I have a BBQ event planned everyone mysteriously has to go to work, visit a sick friend or just leave town.  So today I had to go outside of the house to get my tasters, and that worked out well.

I always try to run as close to the same quality products, and times, that I would use at the competition. I like to try a couple different recipes, and do a comparison.

Today, I did a couple completely new recipes and used our normal recipe, with just a small variation. I did learn a couple things, the main thing was that were closer to being on the right path, then we thought. The ribs that we used our normal recipe, with one important change, was the hands down favorite.

I am very glad we did this practice cook, I thought we would be going with a completely new recipe, after the disappointments from our last couple of rib cooks, but the “new” recipe was a greater disappointment. To have just gone out to a competition and use a new rib recipe without testing it first, would be a huge roll of the dice. It is easier on the pocket, and the pride, do put out a little extra for a small practice cook, then to put out the cost of the meat, and the full expenses for the competition, on a gamble. So, make some friends happy, and practice, practice, practice.

Pulled Pork Nachos

I know there are a lot of folks out there cooking pork for the Super Bowl, and wondering, “how many ways can I serve all this pork?’ This is a quick, easy and affordable way for your friends and family to enjoy your pork. If you don’t get to this one on game day, but have left over pork, this is a great way to enjoy that pork all year long. I published this quick and easy recipe on Huck’s Hut http://www.HucksHut.com,  last summer, and many folks have written to me since, letting me know that, they never thought of using their pork in this way, but that they are very happy with the ease, and the outcome of this dish for them. There are a few add-ons to this recipe you could have fun with, such as adding sour cream, jalapenos, salsa or all the above, there are endless possibilities. Have fun with it.

January 2011, we competed in the KCBS, Lakeland, FL Pigfest. Funny thing vending, your cooking for 1000′s of folks, but, if your like me, you don’t even get a bite. That is what happened for my family at PigFest. We served our BBQ Nachos, and they were a BIG hit. We sold out, Friday and had to go get more supplies from the store early Saturday, and sold all of it that day. Folks told us, they came all the way across the park, just for our Nachos. This week my family and I were discussing the PigFest, and realized none of us had even tried the Nachos, friends had all tried them, and told us they were good, I just went on their word, and man were they right! Of course, with all this practicing, we had pulled pork in the freezer, so it was an easy fix.

This is  a very simple recipe, but I was very pleased with the flavor.

First I start with some Hogs Gone Wild BBQ Pulled Pork.

After that the ingredients are very simple, Corn Chips, Nacho Cheese & BBQ Sauce. We used our house sauce, HGW “Sweet with some Heat”, we found the sweet and a hint of spice, is a nice contrast to the cheese and corn chips.

Simply construct you nachos, we started with the chips, added the cheese, then the pork and finally the BBQ sauce.

Nothing better then sharing Nachos with great friends and family, and the beverage of choice of accompany this tasty treat is…..Ice Cold Beer……..surprise!!!
